Is it possible for the sorting buttons in the Favourites list (sort by score, by locked, etc.) to sort across the entire Favorites list, instead of (or in addition to) only by the contents of the current Favourites page?

I don't think so. A workaround is to go to your profile and un-check "Paginate favourites", which will cause all your favourites to show on a single page. However, if you have a lot of favourites, this will make your favourites page take a lot longer to load.
